Chicken with Creamy Lemon Sauce and Rice |

This easy weeknight dinner with chicken and broccoli is served over hot cooked rice with a creamy lemon sauce. Ingredients:
1 tablespoon oil |
4 small (4 oz.) boneless skinless chicken breasts |
2 cups broccoli florets |
1 clove garlic, minced |
1 (270 g) tub philadelphia original cooking creme cream cheese product |
1/4 cup milk |
2 teaspoons lemon zest |
2 2/3 cups hot cooked long-grain white rice |
Directions:
1. Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (170 degrees F). Add broccoli; cook 2 to 3 min. until crisp-tender, stirring occasionally. Transfer chicken and broccoli to plate; cover to keep warm. 2. Add garlic to skillet; cook and stir 1 min. Add Cooking Creme, milk and zest; cook and stir 2 to 3 min. or until heated through. Plate chicken and broccoli with rice; spoon hot sauce over top. |
