Chicken With Black Lentils And Spinach |

A rich, healthy meal delicious over whole wheat berries, couscous, any kind of rice Ingredients:
1 chicken, cut into 8 pieces |
1/2 cup olive oil |
2 medium onions, diced |
500 grams spinach, washed |
250 grams black lentils (can use green, but not red), washed |
half a head garlic, peeled and sliced |
handful fresh coriander, chopped |
coarse black pepper |
salt to taste |
Directions:
1. Heat the oil. 2. Brown the onions. 3. Add the chicken, garlic and coarse black pepper. Brown. 4. Add the lentils and coriander. Cover with water. Cover the pot. When it boils, turn down the heat. 5. After half an hour, add the spinach. 6. Simmer until the chicken is ready. Cooking time should be about an hour. Note that wheat berries or whole rices may take longer, so if serving with those, start them first. 7. Can replace the spinach with kale or any other tasty green leaf. |
