Chicken With Basil and Lime Sauce

Fresh basil is the most wonderful addition to this dish, in a pinch use dried but when fresh basil is in a bundance this is a great way to serve chicken. if you like you could actually grill or roast the chicken instead of cooking on the stove top. depending on the weather outside this recipe fits all seasons because of the fact you can use different methods for cooking the chicken. you could use boneless breasts if in a pinch for time!
Ingredients:
3 tablespoons oil
8 chicken breasts, bone in
1 cup onion, chopped
1 tablespoon sliced fresh basil
1/2 cup dry white wine
1/4 cup fresh lime juice
1/4 teaspoon salt
1/8 teaspoon ground pepper
1 cup light cream or 1 cup half-and-half
2 tablespoons flour
2 egg yolks
fresh basil leaves and lime slice
Directions:
1. in large frying pan heat oil over medium high heat. brown chicken all over.
2. remove chicken and set aside.
3. add onion to the pan and saute until tender about 3-5 minutes.
4. add basil wine, lime juice, salt and pepper. bring to a boil then reduce heat. return chicken bone up to the pan coat with sauce and simmer covered for 20 minutes. remove chicken to platter.
5. in small bowl whisk cream and flour until smooth. add to the pan drippings and bring to a boil stirring constantly.
6. once thick and smooth whisk in the egg yolks. reduce the heat and let simmer 2 minutes.
7. spoon sauce over chicken on the platter and garinsh with lime slices and basil leaves.
