Chicken With Bacon and Co-Jack Cheese |

This recipe is one of my families favorties. It adds a little extra to the usual baked chicken breasts. The bacon keeps the chicken moist and the little dab of bbq sauce adds a little kick. Left-overs make great sandwiches the next day. Ingredients:
8 boneless skinless chicken breasts |
barbecue sauce, of your choice |
8 slices bacon, cut in half |
8 slices colby-monterey jack cheese or 8 slices monterey jack cheese |
Directions:
1. Rinse chicken breasts and pat dry. 2. Arrange chicken breasts in 9x13 baking dish. 3. Put about 1 tbsp of barbeque sauce on each chicken breast. 4. Put two pieces of bacon criss-cross on each chicken breast. 5. Bake at 350 for 45-60 min depending on size of breasts. 6. Add a cheese slice to each chicken breast 5 minutes before they are done, put back in oven till cheese is melted. |
