Chicken with Asparagus and Roasted Red Peppers

The vegetable flavors actually accented each other very well. I was surprised because I thought it would be a mix of lot of bland flavors. Used green onions instead of regular onions. Made it look prettier :)
Ingredients:
1/2 cup chicken broth
1 1/2 lb chicken breast
1/2 lb asparagus
7 oz roasted red peppers, drained and chopped
1 clove garlic
1/2 cup tomato, chopped
2 tsp balsamic vinegar
1/2 cup mozzarella cheese, shredded
1/2 cup onion, chopped
Directions:
1. Brown chicken large skillet with onions.
2. Once browned, add broth and cook (about 15 mins) until chicken is almost cooked through.
3. Add asparagus, red peppers, and garlic. Continue cooking 10 minutes, until chicken is done and asparagus is tender. Place tomatoes in skillet during last two minutes of cooking.
4. Sprinkle with vinegar. Top with mozzarella cheese and serve.
