Chicken with Asparagus and Roasted Red Peppers |

Chicken, asparagus and roasted red peppers are cooked together and served with chopped tomatoes, cheese and a splash of vinegar. From Ingredients:
1/2 cup chicken broth |
1 lb chicken breast |
1/2 lb asparagus, chopped in 2in sections |
7 ounces roasted red peppers, chopped |
2 clove garlic, minced |
1/2 cup roma tomatoes, chopped |
1 tsp balsamic vinegar |
1/2 cup mozzarella cheese, shredded |
Directions:
1. Heat the chicken broth in a large skillet over medium-high heat. 2. Season the chicken with salt and pepper and place in the skillet. 3. Cook for 15 minutes until chicken is almost done. 4. Place red peppers, garlic and asparagus in skillet. 5. Continue cooking for 10 minutes or until chicken juices run clear and asparagus is tender. 6. Place tomatoes in skillet during last 2 minutes of cook time. 7. Sprinkle with vinegar and top with mozzarella cheese to serve. |
