Chicken with a goat cheese sauce |

Easy and very delicious. This will be a hit with everyone. I got this from the Real Simple Feb 2003 magazine. Ingredients:
4 boneless skinless chicken breast halves |
1 tablespoon olive oil |
2 cloves garlic, peeled and cut in half lengthwise |
1 teaspoon kosher salt |
fresh ground black pepper |
1 cup low sodium chicken broth |
1 teaspoon fresh thyme leave |
1 teaspoon grated lemon, zest of |
4 ounces goat cheese |
Directions:
1. Heat the oil and garlic in a large skillet over medium-high heat until the oil shimmers and the garlic browns. 2. Add the chicken breasts and cook until golden, 3 to 5 minutes on each side. 3. Add the salt, pepper, chicken broth, thyme and lemon zest. 4. Cover, reduce heat to medium-low and cook 3 minutes longer or until the chicken is fork-tender. 5. Remove chicken to a platter and keep warm. 6. Increase heat to high and boil the sauce until thickened, 3 to 5 minutes. 7. Whisk in the goat cheese and pour over the chicken. |
