Chicken Wings With Spicy Apricot Sauce |

Who doesn't like a good chicken wing? Ingredients:
18-20 chicken wings, tips discarded |
1 tbls. olive oil |
1/2 tsp. black pepper |
2 tsp. salt |
1 cup apricot preserves |
1/2 cup lime juice |
1 clove garlic, finely minced |
1/2 tsp. ground cumin |
1/2 tsp. cayenne pepper |
Directions:
1. Preheat broiler 2. Line bottom of broiler pan with foil 3. Spray top with cooking spray 4. Toss wings in oil, then salt and pepper 5. In single layer, put chicken on broiler rack 6. Broil 4-5 inches from heat, turning over after 10 minutes and cook for 10 more minutes 7. Add remaining ingredients to food processor and blend until smooth 8. Bring to a boil over medium heat in small saucepan for one minute, constantly stirring 9. Brush 1/4 cup of sauce onto chicken and broil 2-3 more minutes 10. Turn wings over and brush with another 1/4 cup of sauce and broil 2-3 more minutes 11. Brush with remaining sauce before serving |
