I often make this for my 1 year old daughter's lunch. It is so easy to make and she loves it!! I also love it so I make double and eat it throughout the day, and the next day as well. NOTE: The reason it says to cut everything very small in the ingredients is because I feed this to babies, but you can cut the veggies whatever size you want. Ingredients:
1/2 cup chicken, cut very small |
1 carrot, cut very small |
1 celery stalk, cut very small |
1 cup chicken broth |
1 cup couscous |
2 teaspoons parsley flakes |
salt and pepper |
Directions:
1. sautee the chicken with salt and pepper, set aside 2. boil the carrots and celery until soft, set aside 3. boil the chicken broth with the parsley flakes. When boiled, remove from heat. Add couscous, and top with chicken and veggies. 4. Let sit, covered, for five minutes 5. mix and fluff with a fork, serve. |
