lunch or dinner. I actually use 1 cup of quaker quick cooking barley...equates to 3/4 cup regular pearled barley for nutritional info. Ingredients:
1/2 lbs chicken breast, cooked and cubed or shredded |
3/4 cups barley quick cooking |
3 cups (2 cans) veg-all mixed vegetables |
4 cups low sodium vegetable broth |
40 g (1 medium stalk ) celery, sliced |
1/2 tsp garlic, minced |
2 cups canned tomatoes, diced |
Directions:
1. Place barley, celery, and broth in large pot. 2. Cover and bring to boil. 3. Reduce heat and simmer 10 minutes. 4. Add remaining ingredients and simmer 20-35 minutes. 5. Add any spices you like when you add veggies. 6. Serve hot. |
