A south of the border chicken vegetable spicy soup !! Ingredients:
2 chopped onions |
1 tsp. or to your taste of your favorite dry rub for meat.. |
1/2 tsp. oregano |
1 clove or more of minced garlic |
1/2 tsp. cumin |
6-- 8 cups chicken stock |
2 chopped potatoes |
1 can 19 oz. red beans , drained and rinced |
1 cup chopped carrots |
1 cup corn |
1 cup chopped tomatoes , -seeded |
1 cup cooked chicken |
1/3 cup fresh chopped cilantro |
some sour cream-- cheddar cheese or other. |
Directions:
1. Heat olive oil in pan add onipons and dry rub 2. saute about 3 mins. 3. put in 1/2 tsp.oregano.garlic.cumin, cook for i min. 4. pour in chicken stock 5. add potatoes and all other vegetables. 6. bring to boil reduce heat and cook slowly until veggies are done 7. add chicken and cilantro and cook 5 mins. 8. put in bowls- add a pinch of finely chopped onions, 9. spoonful of sour cream- some cheese |
