I like to serve this up as fall comes! Easy to do as well! Ingredients:
2 (28 ounce) cans chopped tomatoes |
1 (16 ounce) can kidney beans, drained and rinsed |
16 cups chicken broth |
2 cups cubed cooked chicken breasts |
1/2 cup uncooked white rice |
4 celery ribs, including leaves |
2 large carrots |
1 large onion |
1 green pepper |
6 large mushrooms |
2 cups thinly sliced cabbage |
1 cup snap peas |
1 cup chopped broccoli |
1 cup green beans |
5 garlic cloves |
seasoning |
Directions:
1. place all chopped ingredients in stock pot. 2. season to taste with salt/pepper, sage, parsley,basil etc. 3. let simmer for approximately 1 hour. |
