2 tablespoons olive oil |
1 onion, chopped |
3 cloves garlic, minced |
2 stalks celery, chopped |
2 carrots, sliced |
2 zucchini, sliced |
1 cup butternut squash, cubed |
1 red pepper, diced |
1/2 cup yellow split peas |
1 potato, diced |
2 cups frozen corn |
1/2 teaspoon cumin |
1/2 teaspoon thyme |
salt, pepper |
1 bay leaf |
5 cups chicken stock |
2 cups water |
2 chicken breasts, cubed |
Directions:
1. heat oil in pot, add onions and garlic to soften. 2. add remaining vegetables,except corn, stirring. 3. add broth, water, spices, bring to boil and then lower to simmer for 1 hr. 4. pour half of soup into blender, until smooth, then return to pot. 5. add corn and chicken,cook on low 15 minutes,until cooked through. 6. season with salt& pepper. 7. if soup is too thick you can add extra water before serving. |
