Chicken Vegetable Barley Soup |

A chicken soup trying to use lots of veges and barley. Ingredients:
2 tbs butter |
1 c chopped celery |
1 c chopped onion |
1/2 c chopped green pepper |
1 1/4 c chopped carrots |
2 c chopped cauliflower |
4 c low salt chicken broth |
2 c shredded chicken |
1 c barley |
2 garlic cloves |
1 ground pepper |
1/4 tsp garlic salt |
Directions:
1. In large pot, saute celery, onions and green peppers in the butter. When translucent, add the chicken broth. 2. To this add the rest of the ingredients and cook until tender - approximately 1/2 hour. 3. Serve with a dollop of Dijon mustard for added flavor. |
