This is another recipe that I merged with others I found. I love taco soup, but sometimes it was just a bit hard on my tummy. This one does not bother me and and is still as delicious! Ingredients:
1 med. onion, chopped |
1 & 1/2 tsp. minced garlic |
6 cups chicken broth |
1/2 - 1 (4 oz. can) green chilis |
1 can rotel |
1 16 oz. pureed tomatoes |
1 - 2 tsp. chili powder |
1 tsp. cumin |
1 1/2 cup diced chicken ( or you can use 2 cans of chicken breast, drained) |
2 can light red kidney beans |
2 can corn, drained |
1 - 2 tsp mexican seasoning |
Directions:
1. Use a small amount of the chicken broth to saute garlic and onion till soft in a large pot. 2. Then add chicken, and spices and beans and corn. 3. Then add the rest of the ingredients and enough water to your liking. 4. Serve with sour cream, shredded cheese & tortilla chips if you like! 5. Enjoy :) |
