1 can crushed tomatoes |

1 bag sweet corn |
red pepper |
enchilada seasoning to taste |
garlic,minced |
chilli powder and comino to taste |
Directions:
1. boil chicken with cilantro,garlic,onion and diced tomato while sauteeing corn with red pepper,after chicken is cooked remove and shred 2. .return to pot. 3. add all the canned items. 4. add corn and red pepper. 5. add seasonings. 6. cut corn tortillas into strips and fry in seperate skillet. 7. top soup with strips,sour cream,cheese,avacado and fresh cilantro |
