This is an awesome chicken tortilla soup recipe - perfect for a main course and suitable for families with the pickiest eaters! Full of flavor and easy to make! Ingredients:
4-6 boneless skinless chicken breasts |
2-16oz cans of diced tomatoes |
2-8oz cans of tomato sauce |
2-4oz cans of diced green chilies |
1 large onion; diced |
2 cloves garlic |
2t cumin |
1 bunch cilantro; chopped |
1 cup grated cheddar cheese |
1 can chicken broth |
tortilla chips for serving |
Directions:
1. Boil chicken about 20 minutes; or until meat pulls easily apart - shred and set aside 2. Sautee onion and garlic in a large pot until transparent 3. Add tomatoes, tomato sauce, chilies, cilantro, cumin, and desired amount of chicken broth (I use about 1 full can) 4. Simmer at least 1 1/2 hours for maximum flavor, but no less than 20 minutes 5. Return Chicken and cook additional twenty minutes 6. Serve hot with shredded cheese and tortilla chips!! 7. Yummy - Enjoy!! |
