Mexican Soup Ingredients:
4 cups chicken breasts |
3 tbls olive oil |
2 cups carrots |
1 cup celery |
2 cups onion |
10 cups chicken broth |
12 white corn tortillas |
2 tbls garlic |
28 oz diced tomatoes |
1 tsp coriander |
1 tsp cumin |
Directions:
1. Heat oven 400'F 2. Coat chicken breasts with Olive oil, salt and pepper to taste 3. Cook for 20 min 4. Saute chopped onion, celery, carrots for 10 minutes in Olive oil. 5. Add garlic the last minute of the saute. 6. Add 2.5 quarts of chicken stock and remaining ingredients. 7. Chop chicken and add to soup. 8. Return soup to a boil and simmer for 20 minutes. 9. Garnish with Cilantro, cheese and tortilla chips. |
