This is a wonderful tomato based chicken soup...perfect for cold winter days! Ingredients:
1 medium onion |
2 garlic cloves, minced |
1 tablespoon oil |
2 lbs chicken, shredded |
1 (14 ounce) can mexican tomatoes |
1 (14 ounce) can beef broth |
1 (14 ounce) can chicken broth |
1 (10 ounce) can tomato soup |
1 1/2 cups water |
1 teaspoon ground cumin |
1 teaspoon chili powder |
1 teaspoon salt |
1/2 teaspoon lemon pepper seasoning |
2 teaspoons worcestershire sauce |
1/2 teaspoon tabasco sauce |
Directions:
1. Saute onion and garlic in oil. 2. Add remaining ingredients and simmer 30-35 minutes. 3. Serve with favorite toppings, such as chedder cheese, tortilla strips, avacado, sour cream, or cilantro. |
