Pizza with a tortilla crust. Great way to use up last nights chicken!!! Makes 5 individual Pizza's Ingredients:
2 medium white onions |
8 medium organic white mushrooms packaged |
20 oz chicken, breast, meat only cooked, roasted |
5 tortilla multi grain wraps |
2 oz cooking sherry |
10 units string cheese, low moisture, part skim, mozzarella, sticks |
15 tbls canned pizza sauce |
Directions:
1. Pre heat oven to 375 2. Slice onions and mushrooms and dice pre-cooked chicken 3. Sautee Toppings (since it is just going in the oven lond enough to make the tortilla a bit crispy and brown the cheese it is good to pre cook and heat everything) sautee the mushrooms and onions in a skillet with the precooked chicken (this just heats up the chicken) if the chicken seems like it is getting dry add some cooking sherry 4. Spread 3 TBSP of Pizza sauce on each tortilla 5. Devide the toppings among the tortillas 6. Tops with Cheese (I was out of shredded mozzarella so I sheded my string cheese but I used about 210 grams of mozzarells.) 7. bake for 10-12 minutes |
