First time making this spicy adaptation of an Indian dish. I don't recall where I got the recipe from as it was cut out of a British magazine. As my husband is a big fan of Indian cooking he is usually the one that makes this type of dish so this was a first for me. Read more . Very happy with the resutls. Ingredients:
12 chicken wings |
few quartered limes |
whole mild red chillies |
2 garlic cloves |
2 tsp coarsely grated ginger |
5 green cardamom pods |
3 t plain yogurt |
2 t vegetable oil |
1 heaping tsp salt |
1 tsp ground cumin |
1/2 tsp cayenne pepper |
1/8 tsp ground cloves |
squeeze of lemon juice |
Directions:
1. Peel and mash the 2 garlic cloves. 2. Prepare 2 tsp coarsely grated ginger. 3. Crush the 5 green cardamom pods. 4. Make a marinade combining the garlic, ginger and cardomom with all of the other ingredients minus the chilies and limes. 5. Place the chicken wings in a large bowl or container and coat thoroughly with the marinade. 6. Cover and leave to absorb the flavor of the marinade for 30 minutes. 7. Heat the oven to 425 degrees and arrange the chicken wings, skin down, in a couple of roasting dishes, spaced slightly apart. 8. Tuck in the limes and chillies and roast for 45-60 minutes. 9. Turn the chicken wings over half way through the roasting time. |
