My DH has to watch his cholestrol,so I have been researching and adapting recipes for him. This is one of his favourites.Great served with salad,rice,couscous or in pitta bread. Ingredients:
1 lb chicken, skinless, boneless and cubed |
1 teaspoon grated ginger |
1 garlic clove, crushed |
1 teaspoon chili powder |
1/4 teaspoon turmeric |
1 teaspoon salt |
2/3 cup low fat natural yogurt |
4 tablespoons lemon juice |
1 tablespoon chopped fresh coriander |
Directions:
1. Mix everything but the chicken in a large bowl,then add the chicken and marinade approx 2 hours. 2. Line a grill proof tray with foil,and spray lightly with oil. 3. Preheat the grill to medium.Grill the chicken for about 15-20 mins,turning and basting a couple of times. |
