This quick and easy chicken recipe features flavorful chicken thighs, canned tomatoes, basil, and capers and is ready in only 25 minutes. Ingredients:
4 (4-ounce) skinless, boneless chicken thighs, trimmed |
cooking spray |
1 tablespoon dried or 2 tablespoons chopped fresh basil |
2 (14.5-ounce) cans diced tomatoes with peppers, undrained |
1 tablespoon capers |
2 tablespoons sliced fresh basil (optional) |
Directions:
1. Coat chicken with cooking spray; sprinkle with basil. Place a large nonstick skillet over medium-high heat; add chicken, and cook 2 to 3 minutes on each side or until browned. Add tomatoes to pan. Bring to a boil; cover, reduce heat, and simmer 15 minutes, turning chicken occasionally. Increase heat to high; bring to a boil. Cook, uncovered, 2 minutes or until chicken is done and tomato mixture is slightly thick, stirring frequently. Add capers. Sprinkle with fresh basil, if desired. |
