Chicken Thighs Stuffed with Mushrooms |

You can stuff chicken thighs up to 6 hours in advance. Ingredients:
512 g chicken thigh |
2 tsp salt |
1 tsp black pepper |
for stuffing |
1 tbsp olive oil |
2 garlic cloves, crushed |
4 tablespoons chives, chopped |
1 tbsp fresh thyme leaves |
8 oz mushrooms, chopped |
Directions:
1. Heat oil in frying pan over high heat 2. Add garlic,chives, thyme and mushrooms. 3. Stir fry until wilted and starting to crisp, 5 minutes. 4. Pour into bowl and allow to cool. 5. Preheat oven to 400°F 6. When mixture is cool to the touch lift skin on chicken and stuff 7. Place on oven tray 8. Brush chicken with olive oil, salt and pepper 9. Roast until cooked through, about 40-45 minutes. |
