My father-in-law developed this recipe. I could eat it every night! Ingredients:
3 lbs boneless, skinless chicken thighs, cubed |
1 tbsp olive oil |
1 lb broccoli, chopped |
1/2 lb carrots, julienned |
1 lb mushrooms, sliced |
2 onions, sliced |
1/2 cup chicken stock |
1/4 cup soy sauce |
1/8 cup brown sugar |
1 tsp garlic powder |
1 tsp ginger |
2 cups basmati rice, cooked |
Directions:
1. Blanche vegetables briefly in stock. 2. Saute chicken in olive oil. Add vegetables and toss with with teriyaki sauce. Cook until vegetables are soft but not mushy. 3. Serve over cooked rice. |
