Chicken Tenders In Mushroom Garlic Sauce |

This is an easy dinner. Back when I was a working mom I would put this together except for the broth, cover and refrigerate till the next night. Then just take it out, pour in broth and bake. Ingredients:
2 lb chicken tenders |
salt and fresh ground pepper |
1/2 c. flour |
1 onion, sliced thin |
1/2 lb mushrooms, sliced |
5 cloves garlic, minced |
1 c. butter |
2 c. organic chicken or mushroom broth |
Directions:
1. Sprinkle salt and pepper over chicken, then coat with flour. 2. Melt 1/2 C. butter and 1/2 of garlic in skillet. Saute chicken in garlic and butter. 3. Remove chicken and place in baking dish with remaining melted butter and garlic. 4. Put onion and mushrooms in skillet and cook till tender. Pour over chicken. 5. Pour broth over chicken. Bake at 325°F for 35 min uncovered. Stir occasionally. 6. Serve over rice or noodles. |
