This is an amazing chicken salad recipe that I obtained from a dear friend who owns a bed and breakfast in East Texas. This is one of her most requested recipes. Enjoy Ingredients:
4 boneless skinless chicken breasts poached |
6 ounces seedless red grapes |
1/2 cup toasted walnut halves |
1 tablespoon chopped fresh tarragon |
3/4 cup sour cream |
5 tablespoons mayonnaise |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Shred or chop cooked chicken into bite size pieces. 2. Cut grapes in half lengthways and combine with chicken and toasted walnuts. 3. Place chopped tarragon in a very small dish or cup and add about 1 teaspoon boiling water. 4. Combine sour cream, mayonnaise, salt, pepper and wet tarragon. 5. Fold dressing into chicken mixture and chill until ready to serve. |
