This is great! It's fast enough for a week night (if you start marinating ahead) and elegant enough for a dinner party. Ingredients:
6 boneless skinless chicken breast halves |
salt and pepper |
1/2 cup dry white wine |
3/4 teaspoon tarragon |
1 clove garlic, crushed |
3 -4 tablespoons grated parmesan cheese |
paprika |
Directions:
1. Season chicken pieces with salt and pepper. 2. Combine wine, tarragon and garlic. 3. Add chicken to wine mixture and marinate at room temperature for 1 hour, turning occasionally. 4. You may also marinate the chicken overnight in the refrigerator. 5. Place chicken pieces in a greased baking dish. 6. Pour marinade over chicken. 7. Sprinkle with Parmesan cheese. 8. Add a light sprinkling of paprika. 9. Bake, uncovered, at 350 degrees for about 45 minutes or until done. |
