This is my own creation. One of my husband's favorites. Ingredients:
6 flour tortillas |
3 chicken breasts |
1/4 cup diced sweet onion |
4 tablespoons salsa or 1 large diced tomato |
1 1/2 cups cheddar cheese |
salt and pepper |
4 tablespoons cooking oil |
fat free sour cream |
shredded lettuce |
Directions:
1. Cut each chicken breast into 3 pieces. 2. Spray pan with cooking spray. 3. Add chicken pieces, salt and pepper, and onion and cook over med-high heat for about 20 minutes. (Until chicken is cooked through). 4. Shred chicken. 5. Add Salsa (or tomato) and cheese and mix together. 6. Take a 1/6 of the mixture and put onto flour tortilla. 7. Roll tortilla tightly and secure with toothpick. 8. Heat oil in frying pan. 9. Add the tortillas to oil, turn to brown on all sides. 10. Place on paper towel to drain excess oil. 11. Serve with sour cream and lettuce. |
