Ingredients:
1 medium onion, chopped |
1 jalapeno pepper, finely chopped |
1 red bell pepper, chopped |
6 carrots, peeled and sliced |
2 cup(s) frozen corn |
1 can(s) white beans, drained |
1 can(s) black beans, drained |
1 package(s) taco seasoning |
1-1/2 cup(s) chicken broth |
1 can(s) diced tomatoes |
1 rotisserie chicken, boned and cut into bite-size pieces |
Directions:
1. Saute onion, jalapeno pepper, red bell pepper, carrots in 1 Tbs. olive oil for approximately 5 minutes. Add frozen corn, then top with package of taco seasoning. Mix well and cook for 1 minute longer. Add canned diced tomatoes, chicken broth, white and black beans and boned chicken. Mix well and cover, cook on low for approximately an hour. I top this soup with shredded cheddar cheese, sour cream, salsa, green onions, and cilantro. |
