We got this recipe from a family friend. I made it last night and wow is this a good soup. Now that we are going to get into the cold season, time to start posting soups! :-) Ingredients:
3 boneless chicken breasts |
1 packet taco seasoning (1.25 oz) |
2 (10 oz) cans of diced tomatoes with green chilies (not drained) |
1 (12 oz) can of beer (not imported) |
1 (8oz) can of tomato sauce |
1 can of corn (drained) 15 oz. |
1 can of black beans (15 oz) |
1 can of chili beans (16 oz) |
1 medium onion, diced small |
shredded cheddar cheese |
sour cream |
tortilla chips (crushed) - optional |
Directions:
1. Put onion, beans, corn, tomato sauce, beer and diced tomatoes in crock pot. 2. Add taco seasoning and stir to blend. 3. Lay chicken on top of mixture, press down slightly just until covered. 4. turn on low for 5 hours. 5. Remove chicken and shred. 6. put chicken back into soup and cook for another 2-3 hours. 7. I put cheddar cheese, and sour cream on top of mine. 8. You can use tortilla chips on top too. |
