Ingredients:
1 whole(s) bell pepper |
1 1/2 teaspoon(s) cayenne pepper |
3 whole(s) chicken breasts |
2 cup(s) chicken broth bouillion (5 tblspn) |
3 tablespoon(s) chili powder |
2 tablespoon(s) cooking oil |
1 teaspoon(s) cumin |
1 can(s) diced tomatoes |
2 teaspoon(s) garlic |
1 whole(s) onion |
1 teaspoon(s) pepper |
1 teaspoon(s) salt |
0 1/2 teaspoon(s) smoked paprika |
0 1/2 teaspoon(s) regular paprika |
Directions:
1. ) Place chicken in pan and cover with water. Boil chicken for 1 hour with salt and pepper (onion or peppers optional) 2. ) Place garlic, chili powder, cumin, whole tomatoes, and 2 cups of broth from boiled chicken in a blender 3. ) Saute onions and bell peppers for 4-5 mins, add chicken and saute 4-5 more 4. ) take blended mixture and add to pan with chicken, bring to boil, lower heat and simmer for 20mins |
