From The Everything Healthy Slow Cooker Cookbook Ingredients:
1 small onion, diced |
1 garlic clove, minced |
2 tablespoons minced jalapenos |
1/2 lb ground chicken |
1/2 cup diced tomato |
1/2 teaspoon chipotle pepper, ground |
1/2 teaspoon oregano |
1/4 teaspoon hot paprika |
1/2 teaspoon hot mexican chili powder |
1/2 teaspoon ground cayenne pepper |
Directions:
1. In a small nonstick skillet, saute the onions, garlic, jalapeno, and chicken until the chicken is cooked through, about 3 minutes. Drain off any grease. 2. Add the chicken mixture and the remaining ingredients to a 1 1/2 to 2 quart slow cooker. Stir to incorporate the spices into the meat. Cook for 6-8 hours on low. |
