This is an easy meal to put together and is a long time favorite in out home. It makes plenty and the leftovers are the best part. Ingredients:
1 lb boneless chicken breast |
2 tablespoons oil |
1 (13 ounce) can chicken broth |
1 (14 ounce) can tomato sauce |
1 (1 1/4 ounce) package taco seasoning mix |
1 (12 ounce) can corn (drained) |
1 1/2 cups minute rice (uncooked) |
1/2-1 cup sharp cheddar cheese (graded) |
1 (14 1/2 ounce) bag tortilla chips (restaurant type) |
Directions:
1. Saute CHICKEN in OIL until done (does not have to be brown). 2. Stir in CHICKEN BROTH, TOMATO SAUCE, TACO MIX (dried from pkg) & CORN. 3. Bring to a boil,. 4. Cover and simmer for 5 mins (stir occasionally). 5. Stir in RICE, cover and remove from heat (let stand 5 minutes). 6. Sprinkle CHEESE on top and serve with TORTILLA CHIPS. |
