Tabbouleh is a great traditional Middle Easter grain salad. In this recipe, chicken was added to bolster it's protein content. (Source: The Best Life Diet by Bob Greene) Ingredients:
2 cups fat-free chicken broth |
1 cup bulgur wheat |
1 lemon, juice and zest |
2 tbsp extra-virgin olive oil |
1 cup chicken breast, cooked, chopped |
1/2 cup fresh parsley, packed, finely chopped |
2 green onions, finely chopped |
1 cup canned tomatoes, diced |
2/3 cup cucumber, diced |
2 whole wheat pitas, halved |
Directions:
1. In a saucepan, bring the chicken broth to a boil. Slowly stir in the bulgur. Reduce the flame to low, cover the pan, and cook until the broth is absorbed, about 15 minutes. Transfer the bulgur to a large bowl to cool. 2. Meanwhile, in a small bowl, combine the lemon juice, lemon zest, olive oil, salt, and pepper. Add the chicken and toss well. Set the mixture aside. 3. In a large bowl, combine the parsley, green onion, tomato, and cucumber. Add the cooled bulgur and chicken with dressing. Toss the mixture well to combine. Serve in pita halves. |
