Made this for a luncheon and everyone loved it. I used my poppyseed dressing which you will find on my recipe page or use another you may like Ingredients:
chicken marinade |
chicken (4 breasts) |
sesame oil (3 tbsp) |
garlic chopped |
pepper, salt, ginger |
soy sauce (1/4 cup) |
olive oil (1/4 cup) |
salad |
mix of lettuce for base (enough for 8 people) |
1 cup pineapple tidbits drained |
1 cup drained mandarin oranges |
1 cup cooked basmati or jasmine rice |
1 cup sliced snow peas |
1 pepper chopped |
1 container grape tomatoes |
scallions (4) sliced |
1 small onion chopped |
cucumber (1) sliced |
1/2 cup cranraisins |
chow mein noodles (1 small can) |
1/2 cup slivered almonds (toasted) |
salt and pepper to taste |
optional: celery chopped |

Directions:
1. Chicken: 2. Marinade overnight 3. Grill chicken and cube when done 4. Salad: 5. Put lettuce in large bowl 6. add all other ingredients except chow mein noodles) including chicken 7. Pour about 1 to 1-1/2 cup of salad dressing over all and mix 8. Chill for atleast 4 hours before serving 9. Before serving, top with chow mein noodles 10. Sprinkle sesame seeds over top if you like 11. When serving: 12. sides to add to salad: 13. Blue cheese, marinated mushrooms, olives 14. Note: lettuce may wilt a little, so do not put too much dressing on just enough to toss and flavor 15. Serve Balance of Dressing when serving salad |
