Recipe makes 4 servings Approximate total time is 40 minutes Ingredients:
4 serving chicken |
16 spears asparagus |
2 oz goat, soft type cheese |
252 grams portobello mushrooms |
2 tsp rosemary, dried |
2 tsp, leaves thyme, dried |
Directions:
1. Preheat oven to 450 2. Spray a baking dish with non stick cooking spray 3. Pound 4 small chicken breast thin to roll 4. Season chicken with salt and pepper 5. Spread 1/2 oz of Goat cheese on each breast 6. Place 1/4 mushroom on cheese 7. Lay 4 asparagus spears across 8. Sprinkle each with 1/2 tsp of rosemary and thyme 9. Roll chicken around vegetables and use a toothpick to secure 10. Place in baking pan 11. Bake for 20 minutes or until chicken is cooked through |
