This is something my husband's father makes and they call it chicken stuff.. I have no idea if there is a name to it but I have changed up my father in laws recipe and it is one of our favorites. My husband seems to think it is Greek. Ingredients:
1 lb chicken, cubed |
1 green bell pepper, sliced |
1 red bell pepper, sliced |
1/2 onion, chopped |
1/2 cup mushroom |
1 tablespoon garlic, chopped |
1 (8 ounce) can black olives |
6 tablespoons extra virgin olive oil |
5 tablespoons montreal chicken seasoning |
1 teaspoon garlic salt |
1 teaspoon garlic powder |
2 cups rice |
Directions:
1. Put EVOO in pan with cubed chicken, onion, and garlic. Cook over medium heat until chicken is no longer pink. Season with 1/2 Chicken seasoning. While chicken is cooking, seed your bell peppers and slice into strips. Add all veggies and the rest of the chicken seasoning. Cover and simmer over medium-low heat for 20 minutes. Cook rice according to package. Serve over rice.(Make sure you get some of the evoo on your rice or it will taste dry). |
