Chicken Stroganoff - Quick and Easy |

Saw Mr Food make this on a morning show and tried it. It is quick, easy and tasty. Even my picky DS liked it. I used fresh mushrooms (8 oz, I think), Lawry's seasoned salt, 9 oz pre-cooked chicken and lite sour cream. I cooked the pasta while the chicken mixture was cooking. Ingredients:
2 tablespoons butter (1/4 stick) |
4 -8 ounces mushrooms, sliced (if canned, drain) |
1/4 cup dry white wine |
1/4-1/2 teaspoon thyme |
1 teaspoon seasoning salt |
2 cups cubed cooked chicken (approx 1/2 lb) |
1 cup light sour cream (can use fat-free or full-fat if prefer) |
1 lb cooked pasta noodles |
Directions:
1. Melt butter in medium skillet over medium heat. 2. Add mushrooms, wine, thyme and salt and cook 2-3 minutes. 3. Add chicken and bring to a boil. 4. Reduce heat to low and simmer for 10 minutes, stirring occasionally. 5. Remove from heat and stir in sour cream. 6. Serve immediately with cooked pasta. |
