Ingredients:
1 bay leaf |
7 1/2 pound(s) chicken bones |
1 1/2 gallon(s) cold water |
1/4 teaspoon(s) dried thyme |
1 pound(s) mirepoix |
4 parsley stems |
1/4 teaspoon(s) peppercorns, crushed |

Directions:
1. Cut the washed bones into pieces, approximately 3-4" long. 2. Place the bones in a stockpot and cover them with cold water. 3. Bring the cold water to a boil. Reduce to a simmer and skim the scum. 4. Add the mirepoix and sachet to the simmering stock. 5. Continue simmering and skimming the stock for 3 to 4 hours. 6. Strain, cool and refrigerate. |
