Good old basic chicken stock for all those recipes that need it. Will make a difference in the flavor of your dishes. Ingredients:
5 lbs chicken bones |
4 white onions - halved |
4 carrots - whole |
2 stalks celery - whole |
1 bunch parsley |
2 tomatoes - whole |
4 bay leaves |
12 peppercorns |
Directions:
1. Put all ingredients in a large pot and cover with cold water. 2. bring to a boil. 3. skim off anything nasty that comes to the surface, like foam. 4. reduce heat and simmer for 2 hrs. do not exceed 2hrs when using chicken bones. the stock may begin to develop a bitter taste. 5. strain and throw away chicken and veggies. 6. freeze by the pint for another day. |
