Chicken Stir Fry with Brown Rice

use frozen stir fry veggies for mixed veggies, modified this easy stir fry recipe to make it a little healthier
Ingredients:
1 lb boneless chicken breasts, cut into thin strips
2 cloves garlic, minced
16 oz mixed vegetables, frozen
1 c brown rice, uncooked
1 tbsp. vegetable oil
Directions:
1. Cook and stir chicken and garlic in 1 T hot oil in large skillet on medium-high heat 5 minutes or until chicken is cooked through.
2. Add 1/4C water, and vegetables; stir and bring to a boil.
3. Stir in rice; cover. Remove from heat. Let stand 5 minutes. Fluff with fork.
