This is a great stew for anytime. It ranks as a great comfort food. Ingredients:
3 to 4 chicken breasts |
1 can cream of corn |
1 can diced tomatoes |
1 family size can of cream of chicken soup |
small onion chopped |
salt and pepper to taste |
Directions:
1. Boil the chicken breasts. Keep the broth. 2. Sautee the onion 3. Add the soup, corn, onion and tomatoes (drained) to the reserved chicken broth 4. Shred the boiled chicken and add it to the stew 5. Add salt and pepper to taste and heat through on the stove top for about 20-30 minutes 6. Easy to make ahead and reheat 7. *Before serving...crumble a handful of saltine crackers into the stew if you like. I love it this way. |
