This is a quick to toss together, fast cooking very tasty stew. Absolutely bonkers about it in this house. Ingredients:
approx 2 cups of chicken breasts diced up into bite sized pieces. |
2 cups chicken broth |
4 cups diced potatoes, skin on or off as desired |
1 1/2 cups carrots |
1 cup onion diced |
1 clove garlic (i double this for our tastes) |
1 (15 or so oz can diced tomatoes |
1 bayleaf |
salt and pepper to taste |
1 ts thyme (italian seasoning works well also) |
1/4 cup or less oil ( i use less) |
Directions:
1. Heat oil in large pot, saute onions for 2 minutes. 2. Add all ingredients except chicken, potatoes and carrots 3. Bring to a boil. 4. Add potatoes, carrots, and chicken. 5. Simmer covered until vegetables are done, about 30 minutes. 6. Thicken with cornstarch if you like a thicker stew. (I have never needed this ) |
