This is a wonderful comforting stew that is super easy. I can put it together in just a few minutes and after a few hours in the crock pot have a a great meal. Ingredients:
4 boneless chicken breasts, cut into bite size chunks |
6 large potatoes, cut into bite size chunks |
1 lb baby carrots |
1 small onion, diced (optional) |
2 (8 ounce) cans cream of mushroom soup |
6 ounces sliced mushrooms (optional) |
Directions:
1. Spray the crock pot with a little cooking spray. 2. Layer carrots, potatoes, onion, mushrooms in crock pot. 3. Season each layer with a little salt and pepper. 4. Arrange the chicken on top of the veggies. 5. Cover the chicken with the soup and spread evenly. 6. Cook on high for about 3 hours. 7. Stir and cook on low for another hour until chicken and potatoes are cooked through. |
