4 tablespoons olive oil |
4 boneless skinless chicken breasts |
salt, to taste |
pepper, to taste |
onion powder, to taste |
garlic powder, to taste |
1 medium onion, diced |
1 (14 1/2 ounce) can italian-style diced tomatoes (undrained) |
1/2 cup chicken broth |
1 cup mozzarella cheese, shredded |
1/3 cup grated parmesan cheese |
1/3 cup grated romano cheese |
Directions:
1. Preheat oven to 375 degrees. 2. Season chicken with salt and pepper and powders. 3. Heat oil over medium-high heat. 4. When pan is hot, add chicken and saute 2 minutes each side. 5. Remove chicken. 6. Saute onions in pan for 4 minutes. 7. Add tomatoes and broth and cook for approximately 8 minutes to blend flavors. 8. Place reserved chicken in pan and stir to combine. 9. Transfer chicken w/mixture to a 9x13 baking dish. 10. Mix cheeses together and sprinkle over chicken. 11. Bake for about 15 minutes. |
