This has jalapenos and garlic in it. They are just the flavorings . You can season it as you please. It is VERY forgiving. Consider adding apples. Some people like raisins. Some like nuts. Use your imagination!!!!!! Celery, onions or even fold in chopped tomatoes. I like NOT having mayo in it. Safer for appetizers or picnics! Ingredients:
1 lb chicken, cooked and cut to 2-inch pieces |
3/4 cup sour cream (or lighten up with plain yogurt) |
1/4 cup heavy cream (or lighten up with milk) |
1 teaspoon paprika |
1 1/2 teaspoons lime juice |
1/4 cup cilantro, fresh |
2 teaspoons garlic |
2 jalapenos, split and seeds removed |
salt |
pepper |
Directions:
1. In a food processor, combine jalapenos, garlic, cilantro, lime juice, cayenne and paprika. Chop well, but do not puree. 2. Add chicken and sour cream. Pulse slowly. Add cream and pulse until it is the desired consistency. 3. Season to taste with salt and pepper. 4. If too thick, add more cream. 5. Serve on crackers, cucumbers, as a dip or make a sandwich with it! |
