Who knew that chicken and spinach worked so well together? Ingredients:
1 lb roasted boneless skinless chicken breast |
1/2 teaspoon cornstarch |
8 ounces fresh spinach, stems removed |
4 cups chicken broth |
3 slices fresh ginger, thin |
1 teaspoon salt |
Directions:
1. Shred chicken. 2. Toss with cornstarch. 3. Tear spinach into bite-size pieces. 4. Bring broth and ginger to a boil and stir in chicken. 5. Stir in spinach and salt, bring to boil, reduce heat, and simmer 2 minutes. |
