Chicken, Spinach, Artichoke and Rice Casserole |

healthy and light casserole Ingredients:
1 tbsp olive oil |
1 lb chicken breast, skinless, boneless, cut into small pieces |
1 garlic clove, minced |
1 c. sweet onion, chopped |
1 1/2 c. long grain rice |
3 c chicken broth, fat-free, low sodium |
1 tbsp sage |
1 tbsp dried thyme |
1 tsp salt |
1/2 tsp pepper |
2 c fresh spinach leaves |
1 c tomato, diced |
14 ounce artichoke hearts, drained and chopped |
Directions:
1. Preheat oven to 400. 2. Heat 1/2 tbsp oil in large skillet. 3. Add chicken and garlic; cook 7 minutes on each side until browned. 4. Heat 1/2 tbsp. olive oil in dutch oven over medium heat. 5. Add onion and rice; cook until rice is lightly browned, about 15 minutes. 6. Add broth and next 4 ingredients. 7. Add Chicken mixture to dutch oven 8. Top with spinach, tomato, and artichoke hearts. 9. Cover and bake for 40 minutes. 10. Gently fluff mixture. |
