Chicken & Spicy Sausage Soup (Low-Carb) |

It's hard to find low-carb soup, so I decided to invent one and it's really good. I use Portuguese linguica or Mexican chorizo for the spicy sausage. Ingredients:
10 cups water |
3 breasts of chicken |
2 oz spicy sausage |
1 cup diced celery |
1 cup sliced carrots |
3/4 cup diced onion |
2 tbsp minced garlic |
1/4 cup lemon juice |
2 tbsp tomato paste |
1 tbsp salt |
1 tsp pepper |
2 tsp parsley |
1 tsp basil |
Directions:
1. Boil chicken in the water with onion, garlic, lemon juice, salt, and pepper until cooked through (about 1 hour over medium heat.) 2. Remove chicken breasts from water and shred or dice the chicken into bite-size chunks, then put the chunks back into the pot along with the tomato paste, celery, carrots, and sausage. Let simmer over low-med heat for about 30-45 minutes; stirring occasionally. 3. Stir in parsley and basil. Simmer for another five minutes, then serve immediately. |
